Deer Butchery with Jonty from Sargent Butchers, Hythe
Step inside the Countryside Kitchen for a rare chance to learn traditional deer butchery with Jonty from Sargent Butchers, Hythe — one of the New Forest’s most respected craft butchers. This hands‑on session takes you through the art of breaking down part of a deer with care, precision, and a deep respect for the animal and the landscape it comes from.
Under Jonty’s expert guidance, you’ll explore the structure of the carcass, understand the purpose of each cut, and learn how to prepare a beautiful joint ready for your own kitchen. You’ll finish the class with new confidence, new skills, and your own perfectly prepared joint to take home and cook.
This is butchery as it should be: sustainable, skilled, and rooted in the heritage of the New Forest.
